White Tea
White tea is named after the tiny white or silver hairs that cover the bud as it develops at the tip of each tea shoot. Originally only made in China. The teas are usually made from just the unopnend bud, gathered before it can start to unfurl, although some white teas (including Pai Mu Tan) also include a few very new leaves that have opended slightly. The size of the buds varies and whereas some are made from sturdy buds that can meassue up to an inch in length, others are smaller, thinner and more wiry in appearance.

| Once the brand new buds have been carefully gathered, they are de-enzymed by steaming, sometimes shaped by hand, and then dried. When brewed they give a very pale, champagne-coloured liquor that has a very light, soft, sweet, velvety flavour. The caffeine content of such teas is minimal and the lowest of all tea types. |
